Ingredients

  • 1 large Green Papaya peeled and shredded
  • 1 Carrot peeled and julienned
  • ½ cup Roasted Peanuts chopped
  • ¼ cup Fresh Cilantro chopped
  • ¼ cup Fresh Thai Basil chopped
  • ¼ cup Fresh Mint chopped
  • ¼ cup Fresh Bean Sprouts
  • ¼ cup Fresh Lime Juice
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Brown Sugar
  • 2 cloves Garlic minced
  • 1 Thai Chili minced (optional)

Instructions

  • In a large mixing bowl, combine the shredded green papaya, julienned carrots, chopped peanuts, cilantro, Thai basil, mint, and bean sprouts.

  • In a separate small mixing bowl, whisk together the lime juice, soy sauce, brown sugar, minced garlic, and minced Thai chili (if using).
    ¼ cup Fresh Lime Juice, 2 tablespoons Soy Sauce, 2 tablespoons Brown Sugar, 2 cloves Garlic, 1 Thai Chili
  • Pour the dressing over the papaya mixture and toss to combine.
  • Taste and adjust seasoning if necessary.
  • Serve immediately, garnished with additional chopped peanuts and herbs if desired.
