Ingredients

Ingredients For the spice mix

  • 10 Dry red chilies
  • 3 tablespoon Coriander seeds
  • 1 tablespoon Cumin seeds
  • 1 tablespoon Mustard seeds
  • 3 tablespoon Black pepper (whole)
  • 1 teaspoon Fenugreek seeds
  • 1 teaspoon Carom seeds
  • 1 teaspoon Fennel seeds
  • 1 tablespoon Dry fenugreek leaves
  • 1 Star anise
  • 3 Green cardamom
  • ½ Mace

Ingredients For the mutton marination

  • 300 grams Mutton
  • 1.5 cups Curd
  • 1 tablespoon Ginger garlic paste
  • 2 Green chilies (slit)
  • 1 tablespoon Mustard oil

Ingredients For the mutton curry

  • 2 tablespoon Mustard Oil
  • 1 teaspoon Cumin seeds
  • 1 Bay leaf
  • 1 Star anise
  • 1 Dry red chilies
  • ½ Mace
  • 2 cups Onions (sliced)
  • 3 Green chilies (roughly chopped)
  • 1 bowl Marinated mutton
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 bowl Red chili powder
  • 1.5 cups Water
  • ¼ cup Coriander leaves (roughly chopped)
  • 1 medium Potatoes (roughly chopped)

Instructions

  • For the spice mix, dry roast the spices on a pan and grind them into a fine powder.
  • For the mutton marination, take a mixing bowl and add all teh ingredients. Marinate and keep aside for at least 15 minutes.
  • Heat oil in a pan. Add the cumin seeds, bay leaf, star anise, dry red chilies, and mace. Saute.
  • Add the sliced onions and green chilies. Saute. Let it cook for 2-3 minutes.
  • Add the marinated mutton next and mix well.
  • Add the turmeric powder, red chili powder, and the prepared spice mix next. Mix well. Let the mixture cook for 2minutes.
  • Add water next and mix well.
  • Lastly, add the roughly chopped coriander leaves and potatoes. Mix well.
  • Pressure cook the mutton for 4-5 whistles or until it's completely cooked.
  • Serve hot with rice of your choice.
