Virgin Strawberry Margarita Punch:
Yes, the name says it all. It's a virgin strawberry margarita punch, which certainly has some strawberries. But, there are a number of other ingredients in this drink that make it more special. The aquafaba whip, which is often used in desserts and as an egg replacer in baking can be used as a non-dairy whipping cream as well. And add some lime juice and chili powder to flavor this magic aquafaba whip. In combination with the chili lime whip, the awesome strawberry margarita punch even tastes better.
The drink is simple yet delicious. Although it doesn't have any alcohol, it has a mild spice kick from the grilled jalapeños and a beautiful flavor from the charred strawberries. Well, the idea to grill the fruits came into my mind when I came across a grilled strawberry and pineapple salsa recipe. So why not use grilled fruits and veggies for a drink? While there is no cumin or cilantro in this drink, it has a typical Mexican flavor combination because of the sweet and sour chili lime aquafaba whip. How to make pickled jalapenos in instant pot
After working with aquafaba recently, I decided to use this in some of my recipes. Thus, aquafaba in this drink as a topping.
To add some blue color to this dish, I used some blueberries. Just use the blueberries as a topping or throw in a few along with some sliced strawberries to the drink. A chunky bite of muddled fruits add another layer of flavor to this drink.
Without much delay, let's discuss the recipe:
It has some orange juice, I prefer freshly squeezed juice from two mandarins and one orange, and I added the juice of half lemon. The base of the drink is sparkling water, and I used the strawberry flavored one. Remember those strawberries and jalapeño we grilled, I made a fine purée of that. To make the mixture sweeter, I added stevia.
Now the step-by-step guide of Virgin Strawberry Margarita Punch:
Grill and Puree:
- Take some strawberries and cut the stems.
- Grill them on a grill pan or counter-top grill for a few minutes until they start to ooze juice.
- Cut a jalapeno and discard the seeds.
- Grill half of the jalapeno until charred and soft.
- Take the grilled strawberries and jalapeno in a blender.
- Add juice of two to three oranges and squeeze half of lemon.
- Allow the mixture to cool completely.
- Add stevia and blend into a fine puree.
Make the Chili-lime Aquafaba Whip:
- To prepare the chili-lime aquafaba whip, I used half cup of aquafaba.
- Add a pinch of cream of tartar and two sachets of stevia, juice of half lime and a dash of chili powder to the aquafaba.
- You can add some sweet paprika too. The whole idea is to add some chili kick, not heat to this drink.
- Whip the aquafaba until stiff peaks are formed.
- Refrigerate.
Prepare the Punch:
- Start with the first step by taking three parts of strawberry sparkling water and one part mandarin sparkling water.
- Or you can take all strawberry sparkling water.
- Take some strawberries(sliced), sliced oranges and lemon and blueberries in a bowl.
- Gently muddle the fruits and berries so that they release their juice but not completely broken.
- Now add the muddled fruit and berries and the blended grilled puree that we made before to the sparkling water and give a good stir.
- Adjust the sweetness with more stevia and add more sparkling water if you want to dilute the drink.
- Refrigerate.
Serve Virgin Strawberry Margarita Punch:
- Fill the serving glass with some crushed ice.
- Pour some punch into the glass.
- Add half a cup of chili-lime whip.
- Serve with blueberries in a skewer and top with fresh mint leaves.
- You can also serve with fruit skewers of oranges, blueberries and lime with this drink.

The recipe yields more than ten cups of drink. Based on the serving glass that I took, the recipe serves six. It's a low-calorie drink without any added simple sugar. The sweetness comes from the fresh fruits and the stevia used.

Ingredients
For punch puree
- 2 cups strawberries
- ½ cup blueberries
- ½ jalapeno, (seeds discarded)
- 2 oranges(juice and pulp), (I used 1 orange and two mandarins)
- stevia to taste
For Punch
- 3 cups strawberry sparkling water, (chilled)
- 1 cup mandarin sparkling water
- ½ lemon
- Few mint leaves
- ½ cup sliced oranges
- few sliced lemon
For chili-lime aquafaba whip
- ½ cup aquafaba
- ½ lime (juice only)
- A dash of chili powder
- 2 sachets Stevia
Instructions

- Refrigerate.

- Take the sparkling water in a pitcher or jug.
- Take some strawberries(sliced), sliced oranges and lemon and blueberries in a bowl.
