Ingredients
- 1 large Green Papaya, peeled and shredded
- 1 Carrot, peeled and julienned
- ½ cup Roasted Peanuts, chopped
- ¼ cup Fresh Cilantro, chopped
- ¼ cup Fresh Thai Basil, chopped
- ¼ cup Fresh Mint, chopped
- ¼ cup Fresh Bean Sprouts
- ¼ cup Fresh Lime Juice
- 2 tablespoons Soy Sauce
- 2 tablespoons Brown Sugar
- 2 cloves Garlic, minced
- 1 Thai Chili, minced (optional)
Instructions
- In a large mixing bowl, combine the shredded green papaya, julienned carrots, chopped peanuts, cilantro, Thai basil, mint, and bean sprouts.

Ingredients
- 1 ripe mango, peeled and diced
- 2 tablespoons of rice vinegar or lime juice
- 1 tablespoon of sugar syrup or agave syrup
- 1 small garlic clove, minced
- 1 small red chili pepper, seeded and chopped, or two Indian green chilies
- ½ teaspoon black mustard seeds
- ¼ teaspoon of salt
- 2 tablespoons of olive oil
Instructions
- Add the diced mango, rice vinegar, honey or agave syrup, minced garlic, chopped chili pepper, lime juice, and salt to a blender or food processor.
- Blend the ingredients until smooth and creamy.
- While the blender is still running, slowly drizzle in the olive oil until the dressing is well combined.
