- 1 lb fresh spinach, washed and chopped
- ½ lb paneer, cubed
- 1 onion, chopped
- 1 teaspoon grated ginger
- 2 garlic cloves, minced
- 2 green chilies, chopped (optional)
- 2 tablespoon oil or ghee
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- ½ teaspoon turmeric powder
- ¼ teaspoon red chili powder
- Salt to taste
- ½ cup heavy cream
Instructions
- Heat oil in a large pan or wok over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions, ginger, garlic, and green chilies (if using). Saute until onions turn golden brown.
- Add coriander powder, turmeric powder, and red chili powder. Mix well and cook for 1-2 minutes.
- Add chopped spinach and mix well. Cover and cook for 5-7 minutes or until spinach wilts and becomes soft.
- Allow the mixture to cool slightly, then blend it in a blender or food processor until smooth. Return the mixture to the pan.
- Add cubed paneer to the pan and mix well. Cover and cook for 5-7 minutes or until paneer is heated through.
- Add salt to taste and heavy cream. Mix well and cook for 2-3 more minutes.
- Serve hot with rice or naan bread.
