Making some homemade chocolate has always been on my list. I, being a chocolate addict, end up buying chocolate chips or bites in bulk. Since I watch my sugar intake, I always look for keto or sugar-free chocolates while shopping for some. But unfortunately, most of the sugar-free chocolates have sugar alcohols that also act just like sugar and result in steep spikes. My low carb chocolate candies are sweetened with stevia and are keto-friendly. Plus, these are fully vegan.
Making this homemade low carb chocolate is easy, quick and saves a lot of money. If you are like me and have ever bought sugar-free or low carb chocolates, then you must know how expensive they are. Even those tiniest keto chocolate bites are super expensive. Therefore, recipes like this are always on my list. My low carb chocolates are perfect keto snack for those looking for a sweet bite without jeopardizing their diet. If you want to enjoy some chocolate without feeling guilty, then this recipe is for your instant pleasure!

The chocolate bars and bites we find in the stores have loads of sugar. The white and milk chocolates also contain a profuse amount of dairy. In short, the store-bought chocolates are quite far from the healthy tag. But this homemade, low carb chocolate has zero added sugar or dairy. Therefore, you can enjoy these chocolate bites without thinking much about carb or sugar.
Is this chocolate carb-free?
In this recipe, I am using unsweetened cacao powder or pure cocoa powder. You can also use 90% Lindt chocolates with no added sugar, but those bars do have a bit of sugar in them. Unsweetened chocolate chips are another great option to use in this recipe. I love the Hu Gems brand and Now Foods cocoa nibs as both of them are free of added sugar and plant-based. Feel free to use nuts in this recipe. Both chopped nuts and cocoa nibs add a nice crunch to the low carb chocolate bites.
If you want, you can also use Monk fruit sugar for sweetening these chocolates. I used stevia as it was available in my pantry.

- Orange zest
- Gingerbread spice
- Cinnamon
- Sea salt
- Nuts and seeds
How To Make Instant Pot Low Carb Chocolate?
I have used instant pot to melt my chocolate before and it works wonderfully. Therefore, I decided to use the instant pot method to make some chocolate this time. Use a pot in the pot for this recipe and it works the best. Since I used the pressure cook function for this recipe, the chocolate and cocoa butter melts slowly under constant temperature and doesn’t leave any lumps. Once the pressure cooking ends, all you need to do is mix the contents really well and add any mix-ins for extra flavors and pour in molds and chill. Your low carb chocolate bites will be ready in no time.
Ingredients of Low Carb Chocolate
½ cup(100g) cacao butter, 6 tablespoon cocoa powder unsweetened (48g), 4 tablespoon powdered stevia (32g), Mix-ins or toppings
Instructions:
Instant Pot Method:
- In an instant pot safe pot-in-pot or glass bowl add all the ingredients and cover with the aluminum foil.
- Add 2 cups of water in the inner pot of the instant pot and place a trivet.
- Place the bowl on the trivet and close the lid. Seal the vent.
- Select the pressure cooking mode and set the timer for 3 minutes.
- After the beep, wait for 10-minutes and then open the lid. Carefully remove the bowl and remove the foil cover.
- Use a spoon or a whisker to mix the ingredients really well until the cocoa powder and sweetener melts in the cocoa/cacao butter.
- Add mix-ins, nuts, chips or nibs. Mix well.
- Pour the cocoa mixture into chocolate or candy molds.
- Place in the refrigerator for an hour to chill.
- If not using molds, pour the mixture onto parchment paper to make bark/chocolate clusters.
- Enjoy!
Stovetop Method:
- Take a medium saucepan and melt the cacao butter under medium heat while stirring continuously.
- After the butter melts, add the cocoa powder and powdered sugar-free sweetener.
- Stir until combined.
- Add any mix-ins and stir well.
- Pour the mixture into candy or chocolate mold to make the low carb chocolate in desired shapes.
- Chill to harden and enjoy!
