These low-carb jalapeno cheddar muffins are most likely to be your everyday food if you are like me and fall in love with it. I made these keto cauliflower muffins recently, and I have been making these a lot ever since. The best part is you can freeze it, thaw it and eat it whenever you want.

This recipe was created during another experiment. While making the vegan keto falafel, I had some leftover mixture which I though will use in savory something. So I added almond milk, mixed in a food processor and created a semi-doughy mixture to start with another experiment. The result is these yummy Keto jalapeno cheddar muffins. And, the best part is it doesn't have eggs, butter or any extra fat added except the natural ones from the almond or coconut flour.
The low-carb and plant-based diet are not very easy. But this challenging journey let you experiment a lot with new recipes and come up with some failed and some successful ones. While my Jalapeno cheddar was a big hit, I was very dissatisfied when they were all gone. But I made these again and enjoyed all by myself the entire week.
These keto jalapeno and cheddar cauliflower muffins do not actually have a very dense or bready texture like a muffin. But they are soft, chewy outer edges and very flavorful considering the herbs used. I am 100 percent certain that you will find these impressive!
If taken and eaten straight out from the refrigerator, which I often do during lazy hours, these are a bit firm and chewy. Add some cheese and reheat, these are perfect keto vegetarian bread options. Vegans, feel free to add some vegan cheddar, nut cheese or add 1 tablespoon of nutritional yeast for a very cheese-like taste. Or, if you just reheat, these keto jalapeño cheddar muffins get all soft and perfect with a bowl of soup or as a tasty side with a salad bowl.
Even with jalapeno, these are extremely kid-friendly just like my other cauliflower queso recipe. My little ones loved these with their favorite tomato soup and I enjoyed it more as a side with my buddha bowls. These cute, little muffins are fun to consume as well as have literally no cauliflower taste.
I now make sure to buy an extra head of cauliflower to make these low carb cauliflower muffins to make for the entire week or more. Now, let's go straight to the recipe.
How to Make Keto Jalapeno Cheddar Muffins?
Let’s discuss the recipe. While many cauliflower muffin recipes have drained cauliflower rice, egg and cheese, my muffins don’t have any of these.
Ingredients for Keto Cauliflower Pizza:
It has three cups of riced cauliflower from fresh cauliflower florets. Then almond or coconut flours - ¾ cup, 1 tablespoon ground chia seeds, ¼ to ½ cup psyllium husks, 1 jalapeño sliced divided, ½ cup cheddar cheese or ¼ cup nutritional yeast, salt to taste, 2 tablespoon hemp
Toppings – jalapenos, cheddar cheese
- Start by mincing the cauliflower. I recommend using a food processor for this.
- To the minced or riced cauliflower, add flours, herbs – garlic and dried herbs, jalapeños, cheese or nutritional yeast, salt and mix well.
- Sometimes, you may notice that the dough is dry after adding flours.
- In that case, add 1 to 2 tablespoon of
aquafaba or almond milk. I ended up adding 1 tablespoon of almond milk to the mixture. - Then transfer the mixture to a bowl and add the husk, chia seeds,
and flax eggs. Mix really well. - Allow the seeds to absorb the liquid really well. After five minutes, the mixture will look doughy and workable.
- Scoop out few tablespoons of the mixture into the muffin pan and spread it really well. The mixture usually doesn’t stick to nonstick baking pan. But I highly recommend using a greased muffin pan for this recipe.
- Cook in the preheated oven for 25 minutes. After 25 minutes, add more jalapeños and cheddar toppings. Bake again for 15 minutes until the edges are brown. Serve warm.
- Store leftovers in airtight containers and refrigerate up to three days or freeze up to a month.

The flax egg is optional. I just use chia seeds for this recipe. But if you don’t use chia seeds, use a flax egg.
