My version of Keto cauliflower pizza recipe is terrific because it's flourless, contains no eggs and yet flavorful, and loaded with nutty, cheesy goodness. I am including both vegan and vegetarian options so that you can choose whatever you want.
Pizza is one of those foods that I can not live without. Even though I am Indian, eat curries almost every other day, I grew up eating pizzas. My sister and I used to take a special trip just to enjoy few slices of cheese-loaded pizza. Yes, you heard it right. These cheesy slices are addictive for real.

My low-carb, as well as vegan cauliflower crust, has no flour. You will be happily amazed to see how delicious and versatile this pizza is. Whether you are vegan, WFPB or keto, I guarantee this recipe is a keeper.
The crust is made of cauliflower rice, almond, and coconut flour, Italian seasoning, and a mixture of chia and psyllium husk, vegan or fresh mozzarella cheese/cashew cream, and lots of toppings of choice. From there, you can personalize your pizza just the way you want.
How to make Keto Cauliflower Pizza?
Let’s discuss the keto cauliflower pizza recipe. While many cauliflower pizza recipes have drained cauliflower rice, egg and cheese, my crust doesn’t have any of these.
Ingredients for Keto Cauliflower Pizza Recipe:
3 cups of riced cauliflower from fresh cauliflower florets. Then almond or coconut flours - ¾ cup, 2 flax eggs, and 1 tablespoon ground chia seeds, ¼ to ½ cup psyllium husks, 1 teaspoon Italian seasoning, ½ teaspoon dried basil, salt to taste, 2 tablespoon hemp
If vegetarian- use 1 cup mozzarella cheese if vegan - use 1 cup vegan mozzarella or ¼ cup nutritional yeast + cashew powder or cream
Toppings – olives, onions, jalapenos, cheese, spinach artichoke or any protein of your choice
How to Make Cauliflower Pizza Crust?
- Start by mincing cauliflower or making cauliflower rice. I feel a food processor works best for this recipe, but you can use a hand grater for making riced cauliflower.
- After finely mincing the cauliflower, add dry ingredients, herbs, and salt+pepper. Usually, the moisture in cauliflower makes the mixture little runny or semi liquidy, and we will add chia seeds powder and husk to make it more doughy.
- Transfer everything to a large bowl, add psyllium husk and chia seeds powder. Set aside for 5-7 minutes.
- Sometimes, you may notice that the dough is dry after adding flours. In that case, add 1 to 2 tablespoon of
aquafaba or almond milk. I ended up adding 2 tablespoon of almond milk to the mixture. - However, we are not adding any cheese to the crust. Our dairy-free crust is equally good, firm and yum after baking.
- If you are just egg-free and not dairy-free, add two cups of mozzarella cheese and parmesan cheese to the dough before flattening it on the pizza pan or the sheet pan.
- After five minutes of resting the mixture, the mixture will look doughy and workable.
- Scoop out few tablespoons of the mixture onto the baking pan and spread it really well. The mixture usually doesn’t stick to nonstick baking pan. But I highly recommend using a greased baking pan for this recipe.
- Cook in the preheated oven for 25 minutes. The crust is ready.
Keto Cauliflower Pizza Recipe:
- After 25 minutes, add freshly made sugar-free tomato pizza sauce or marinara and top with your favorite toppings, and herbs.
- Bake again for 15 minutes until the edges are brown. At this point, add cheese or cashew cream or nut cheese and leave in the oven for just 2 minutes. It’s done.
- The cheese will melt immediately and all you will have is melty, cheesy, keto cauliflower pizza without eggs. Slice, serve and enjoy!
- Store leftovers in airtight containers and refrigerate up to three days or freeze up to a month.

Notes
- The cooking/baking time for the pizza can vary depending on the thickness or the size of the crust.
- Predictably, thinner crusts will cook faster and thicker will take longer.
- My Pizza was the size of an 8-inch sheet pan which took 40-minutes.
