Yay, virgin strawberry margarita lovers. But this quick, sugar-free strawberry jam version is also a good option to store your berries for longer. The best part is you don’t have to spend like an hour to make a perfect instant pot strawberry jam. In fact, my sugar-free version is also a better-for-you option, if watching carbs.
I love to use this on my coconut yogurt mostly. However, feel free to eat this jam with your toast, or use for a pie filling or just as you wish.
How long does the instant pot strawberry jam no sugar recipe take?
The entire process of cooking takes less than 15-minutes. Just 7-minutes of initial cooking and 5-minutes of sautéing after pressure cooking. Even without cornstarch or pectin, this no sugar instant pot strawberry jam is thick and loaded with strawberry flavor.
What are the ingredients of instant pot no sugar strawberry jam?
- Strawberries: Use juicy, ripe, and red strawberries. If you don’t have berries in season, use thawed frozen strawberries.
- Lemon: The juice of lemon adds a nice tart flavor to the jam. The juice also works with the sugar-free sweetener to give a gel-like consistency.
- Swerve or Monk Fruit Sweetener: Feel free time use sugar if you want. For a sugar-free version, use either swerve or monk fruit sugar. Both options work best in this recipe.
How to make instant pot strawberry no sugar and no pectin?
Ingredients:
2 lbs of fresh strawberries, 1 lemon, 1 cup sugar-free sweetener of choice (Swerve)
Method:
- Wash and dry strawberries and remove the green parts.
- Cut the strawberries to halves and juice the lemon and keep some zests for the recipe.
- Set the instant pot to the sauté mode. Now add, strawberries, lemon juice, lemon zest, and swerve.
- Sauté for about five minutes till berries release some liquid. This step is necessary since the liquids will help build up pressure.
- Set the IP to “Manual” and pressure cook for 2 minutes. Once the instant pot beeps, let it release pressure naturally.
- Open the lid and set the instant pot to sauté mode again. Stir and cook the jam till it becomes a gel-like consistency.
- Switch the IP off and allow the jam to cool down.
- Store the jam in a sterilized container of choice and refrigerate for a month.

Notes
- If your instant pot has a sterilizing function, I recommend you to sterilize your jars before storing condiments in them.
- You can use the same process to make blueberry jam or a mixture of strawberry and blueberry jam.
- If you do not want to use swerve, you can use sugar or agave syrup in this recipe. All these options give equally satisfying results.

I don't know what I did wrong...I used Lakanto sweetener and followed all directions. The next morning after the jam had been chilled in the fridge, the sugar crystallized and you can taste the sugar crystals when you taste it.

I am so sorry, it happened. I also use Lakanto Monk Fruit sweetener. Sometimes, sugar alcohols in alternative sugar sweeteners react in certain conditions. I would suggest to warm the jam a little and blend it in a high-speed blender before using. That may help.
