This Diwali, make something easy, instant and healthy. I present my new favorite: instant keto katli.
I have a recipe for sugarfree cashew katli in my blog. Here is the link. But if you want a recipe that is totally low-carb or keto, then this delicious Indian katli is for you.
I am not keto, but I follow a low-carb diet. And festive seasons often jeopardize my diet plans. Well, after all- Diwali is all about good food, fun, festivities and enjoyment. But adding a low-carb dessert doesn’t require a lot of work. Last year, I made these keto jamuns and this year, I am all set with a big batch of keto katlis. Find the recipe of jamuns here.
My Keto Katli:
I am not quite sure how these diamond shaped fudge got its name. A bit Google browsing will help you find the real answer. This unique Indian sweet falls between a cookie and a fudge. It’s soft, often lightly sweet, melts in the mouth and tastes out-of-the-world.
My version, being keto, contains blanched almond flour. Yes, you will need blanched almond flour only. The reason why it’s instant, because it doesn’t require any cooking. Usually, katlis are made from a dough that is often cooked in a sugar syrup. But in this case, we don’t need that. Let’s see how I made this.
Recipe: Instant Keto Katli
Roast the blanched flour:
- Take a cup of blanched almond flour and sift it through a flour sieve.
- Add the sifted flour to a preheated frying pan and roast it for a while.
- Once the flour becomes fragrant, turn the heat off and transfer the roasted flour into a mixing bowl.
Powder sweetener:
- I used swerve for this recipe. For most Indian desserts I prefer swerve or Splenda because both have minimal aftertaste. However, you can use any sugar-free sweetener of your choice for this recipe.
- Because most sugar-free sweeteners are granular, you ll need to make a fine powder of it.
- Take 2tbsp of sugar alternative in a small spice jar and blend it into a powder. Use it for this recipe.
- Prepare the milk.
- Take four tablespoon of almond milk in a bowl and warm it.
- Add a pinch of saffron and allow it to stand for a while
Prepare the dough:
- Now add the sweetener powder to the almond flour and mix well.
- You can add some cardamom powder or rose extract at this point.
- Now add some saffron milk(1 tablespoon at a time) and mix it well to prepare a dough.
- Once the dough forms, you will see little oil oozing. Knead it for a few more minutes and a smooth dough will form.
Prepare Keto katli:
- Place the dough ball on a parchment paper and roll it flat using a rolling pin.
- Keep the thickness equal and even throughout.
- By using a big kitchen knife, cut the dough into diamond shaped katlis.
- Garnish with chopped nuts or saffron strands.
- Allow the katlis to air dry for a while.
- Your keto katli is ready to savor.
Nutrition Info for Keto Katli:
This recipe yields medium-sized 24 katlis. It depends on the way you cut the diamonds and the size. Based on the ingredients used, the nutrition fact for 1 medium katli is mentioned below.
Note:
- You don’t need any extra fat to make this katli.
- However, if you must use-add a tablespoon of coconut oil or ghee for the best results.
- If using sugar, add equal amount of powdered sugar matching the almond flour amount in cups.
- Adding any flavoring agent, essence or color is a personal choice. I have used saffron milk for adding a touch of saffron in this recipe.
- Use a silicone spatula to knead the dough thoroughly so that the sugar free sweetener incorporates well in the dough without leaving any chunky or lumpy mass.
These katlis stay longer in the refrigerator and stay fresh outside for three to five days.

Really easy to make and helps to kill a craving. I don’t like the after taste of erythritol (swerve) so used Splenda- however end product had almost no sweetness at all. I’ll redo this with 1/4 to 1/2cup next time- bearing in mind that the variant that uses sugar uses and equal amount to almond flour (1cup). Also added powdered cardamom, but next time will also add a drop or two of kewra essence.

Thank you, Leena. I usually adjust the sweetness after kneading the dough. Since Splenda is very light sweet, you may need 1/4 cup extra to make the katli enough sweet for your palate. Hope you enjoyed making them.
