Fada lapsi or broken wheat Halwa is a traditional Indian dessert recipe often made during the festive season of the Navratri. Here is my instant pot Fada lapsi recipe.
What is Fada Lapsi?
Fada is a local name of broken wheat in the western Indian state of Gujarat. The finest broken or cracked wheat is fada, whereas the thickest one is Kansar. In India, broken wheat is popularly known as dalia or daliya. The porridge or Halwa made from Fada is known as Fada Lapsi.
There are many other synonyms for this dish, including Cracked Wheat Fada, Fada Lapsi, Lapsi Halwa, Gur ki Lapsi or Gur ka Halwa. This dish is not only popular in Gujarat, but it is also quite popular in Northern India. The primary ingredients of this recipe are:
- Fada|Dalia (cracked wheat)
- Jaggery (unfiltered sugar)
- Ghee
It is very easy to make this recipe in an instant pot. The pressure cooking cuts the cooking time of daliya and adds a nice, gooey texture too. Feel free to veganize this dish by replacing ghee with coconut oil.
What is Fada or Broken|Cracked Wheat?
Fada is unpolished and processed coarse wheat meal. It is also popularly known as Bulgur or cracked wheat. Fada|Dalia is commonly used in Indian cuisine mostly in making savory and sweet dishes. Some of the popular Indian dishes made from dalia are sweet daliya, upma, and khichidi.
Health benefits of Fada:
- Fada dalia is rich in vitamins, minerals, and fiber, which also provides a good amount of protein too.
- Due to its high fiber content, dalia is often eaten by people looking for weightloss.
- This grain is easy to digest and has a comparatively low glycemic index.
Fada lapsi is a very delicately sweet Indian dessert made with jaggery. Since it’s time of the Indian festive season, this is one of the sweet dish that I am making as a part of the festive feast.
How to Make Fada Lapsi in Instant Pot?
Instant pot does make everything quick and easy. Just 11 minutes of cooking and you get this perfect Fada lapsi dessert.
Ingredients:
¼ cup homemade ghee + 1 tbsp, ⅔ cup Cracked Wheat or Dalia (fine variety), ¼ cup nuts and dried fruits (almonds & golden resins)(roughly pounded or chopped), ½ tablespoon whole spices (2 cloves, 5-6 cardamom seeds and 1 bay leaf), 3 cups warm water, ½ cup jaggery powder (more if you like sweeter), ½ teaspoon ground cardamom, 1tbsp chopped nuts, to garnish
Method of Making Fada Lapsi in Instant Pot:
- Set the Instant pot duo to sauté mode and melt ghee.
- Add spices followed by dalia|fada to the pot.
- Roast till it becomes golden brown and fragrant. To avoid burning, keep stirring the grains after adding to the pot.
- Once the dalia|daliya is roasted well, add pounded nuts and dried fruits and sauté. Add cardamom powder and mix well.
- Now add warm water and jaggery, mix well.
- Seal the instant pot and pressure cook on high pressure for 11 minutes. Once the pressure releases naturally, open the pot and stir well. Add 1 tablespoon ghee now and mix well.
- Garnish with chopped nuts and serve warm.
Note:
- If you see some water after pressure cooking, the grains rest and they will soak the water. If there is still water, set the IP to the sauté mode and dry out the water while stirring continuously.
- If you want to make it a vegan dessert, replace ghee with coconut oil. You may also add a tablespoon of freshly grated coconut while sautéing.
