You will need two sets of ingredients to make the chicken with seasoned rice
For the chicken
- Chicken: 300 grams
- Salt: 1 tsp
- Black pepper powder: 1 tsp
- Paprika powder: 1 tsp
- Onion powder: 2 tsp
- Garlic powder: ½ tsp
- Oil: 2 tbsp
- Garlic (minced): 1 tbsp
- Green chilies (minced): ½ tbsp
- Onions (sliced): 1.5 cups
- Bell peppers (julienne): 1 cup
- Tomato puree: 1 cup
- Mixed herb seasoning: 1 tbsp
- Chicken broth: 1 cup
For the rice
- Butter: 1 tbsp
- Garlic (minced): 1 tbsp
- Corn kernels (boiled): ¼ cup
- Mixed herb seasoning: 1 tbsp
- Salt: ½ tsp
- Rice (cooked): 1.5 cups
- Parsley (chopped): For garnish
How to Make the Chicken with Seasoned Rice
Once you have all the ingredients, ready, here is what you will need to do to make the dish
Take a mixing bowl and add the chicken along with salt, black pepper powder, paprika powder, onion powder, and garlic powder. Mix well with the chicken. Make sure each and every piece is properly coated with teh spices.
Next, heat oil in a non-stick pan. Add the garlic and green chilies and saute for 45 seconds.
Add the onions and the bell peppers. Stir and cook for 3-4 minutes or until the onions turn translucent.
Next, add in the tomato puree and mix well. Let the curry simmer for 5-6 minutes.
Add the marinated chicken next and mix. Saute and cook the chicken for 8-10 minutes.
Add mixed herb seasoning and saute.
Add chicken broth and let the curry come to a boil and then lower the heat and let it simmer for 5 minutes. Cook until the chicken is completely cooked.
Next, for the rice, heat butter in a pan. Add garlic and onions and saute. Stir and cook for 2 minutes.
Add in the vegetales next and maxi well. Saute and cook for 3-4 minutes. The vegetables should be cooked enough but still retain their crunchiness.
Add in the mixed herb seasoning and salt next and mix well with the vegetables.
Next, add the cooked rice and give everything a good mix. Lower the heat while you are mixing the rice.
Serve the rice hot with the delicious chicken curry and garnish with parsley.
