This Indian style evening snack is usually deep fried in oil, but here, we’ve tried a healthier version using the Air Fryer.
The bondas are packed with flavor, and come together in under 30 minutes, making them a great snack to serve at a house party or when you’re looking to enjoy something over the weekend.

Ingredients For the Recipe
You’ll need three sets of ingredients to make the aloo bonda and the spicy green chutney.
For the Potato filling
- Potatoes (boiled): 2 cups
- Oil: 1 tbsp
- Mustard seeds: ½ tsp
- Curry leaves: A bunch
- Cumin seeds: ½ tsp
- Hing: A pinch
- Onions (finely chopped): ½ cup
- Green chilies (finely chopped): 1 tbsp
- Ginger garlic paste: 1 tbsp
- Turmeric powder: ½ tsp
- Red chili powder: 1 tsp
- Coriander powder: 2 tsp
- Cumin powder: 1 tsp
- Dry mango powder: 1 tsp
- Garam masala powder: 1 tsp
- Salt: 1 teaspoon or as per taste
- Coriander leaves (chopped): ¼ cup
For the coating
- Besan: ¾ cup
- Cornflour: ¼ cup
- Red chili powder: ½ tsp
- Turmeric powder: A pinch
- Salt: ½ tsp
- Water: As required
For the Green chutney
- Coriander leaves: A bunch
- Mint leaves: ½ cup
- Garlic cloves: 8-10
- Green chilies: 3-5
- Salt: 2 teaspoon or as per taste
- Lemon juice: Half a lemon
How to Make the Aloo Bonda With Spicy Green Chutney
Once you have all your ingredients ready, here’s what you’ll need to do to make the aloo bonda and the green chutney.
Pre-heat the air fryer at 400°F for 5 minutes.
Heat oil in a pan. Add the mustard seeds, cumin seeds, curry leaves, and hing.
Next, add the green chilies, onions and ginger garlic paste. Saute.
Add the powdered spices next and mix well.
Add the boiled and mashed potatoes next and mix well.
Sprinkle chopped coriander leaves and mix. Turn off the heat and let it cool to room temperature.
Next, in a mixing bowl, add the besan, cornflour, spices and salt. Mix.
Gradually add water and whisk the mixture into a thick paste.
Now, make small roundels of the potato mixture and dip them into the besan paste.
Make sure the potato roundels are coated well.
Spray the air fryer basket with oil.
Next, place the coated balls in the air fryer basket, spray a bit of oil on them, and cook them at 400°F for 8-10 minutes.
You can flip them once in between and brush some oil so that they are cooked well.
For the green chutney, blend everything together in a blender. Adjust salt and lemon juice if required.
Serve aloo bondas hot with green chutney and enjoy it as a delicious snack.
Frequently Asked Questions
I kept the potato mixture for the aloo bonda simple and used just some boiled potatoes and spices, but if you want to, you can also add in other ingredients of your choice.
Green peas, bell peppers, corn and carrots are some great options to add into the potato mixture.
In fact, you can also cut a small cube of cheese and add it into the potato ball.
Your leftover aloo bonda can be stored for 3-4 days in the refrigerator, and then reheated in the microwave when needed.
You can prepare the green chutney ahead of time and store it for up to a week in the refrigerator too.
Tips & Tricks to Make the Aloo Bonda With Spicy Green Chutney
Making the aloo bonda and the green chutney can be super easy, but you might want to take note of these tips and tricks too.
- If you want the aloo bonda to have a crispy exterior, add a tablespoon of rice flour into the coating mixture along with the besan.
- Make sure you allow the boiled potatoes to cool down completely before you mash them. This will prevent any excess liquid from getting into the mixture, and will keep it from getting sticky and lumpy.
- If you don’t have an Air Fryer but still want to make these, you can choose to bake them in the oven instead. Just remember to grease the baking sheet or line it with parchment paper before you place the battered aloo bonda on it.
- Remember to add water gradually into the mixture for the batter. Adding too much water can cause the mixture to become runny, and it won’t coat the potato balls well.
