- 1 cup of raw cashews
- ½ cup of grated coconut
- 2-3 green chili peppers
- 1-inch piece of ginger, peeled and chopped
- 3-4 cloves of garlic
- ½ teaspoon of cumin seeds
- Salt to taste

Instructions
- Preheat the oven to 350°F. Place the cashews and grated coconut on a baking sheet and toast in the oven for 8-10 minutes or until lightly golden.
- Remove the cashews and coconut from the oven and let cool.
- Once the cashews and coconut are cool, place them in a food processor along with the green chili peppers, ginger, garlic, cumin seeds, and salt. Pulse until smooth paste forms.
- With the food processor running, slowly add water as needed to thin out the chutney to the desired consistency. Scrape down the sides of the food processor as needed.
- Once the chutney is smooth and creamy, taste and adjust seasonings as needed.
- Transfer the chutney to a bowl and serve it as a condiment for Indian dishes or as a dip for vegetables or crackers.
