Vegan, Gluten-free and Keto-friendly Mixed Nuts Sugar-free Nutella:
I have now a nutella recipe; yes my very own test tasted mixed nuts sugar-free nutella, which is vegan and keto-friendly.
I have a confession to make that I have nutella addiction. Yes, I can eat a whole jar in a few minutes without thinking twice. Considering the whopping 200 plus calories with 21 g of sugar in just two tablespoons of Nutella, it should be banned from my so-called low-carb diet. Yes, I literally meant BANNED. It’s a hidden sugar bomb which has more than half of the jar filled with sugar and only ¼ of the jar filled with hazelnuts. The truth is it's not hazelnut-chocolate spread, but a sugary chocolate spread with hints of hazelnut. No wonder, nutella is so addictive.
When I read the facts about nutella, I realized what I am doing wrong. Even though I eliminate most bad carbs and simple sugar based food from diet, my nutella craving doesn’t let me ditch this yum spread ever. That’s the reason I came up with the idea to make mixed nuts sugar-free nutella, which is even protein rich because of the added chocolate protein powder.
My Mixed Nuts Sugar-free Nutella:
This recipe has a variety of mixed nuts. I have taken walnuts, pecans, cashew and almonds, some hazelnuts, macadamia nuts and Brazil nuts. You can even add pistachios and adjust the amount of other nuts as per your choice too. The main base of this nutella is walnuts. I took 2 cups of walnuts, then 1 cups of cashew and almonds, followed by 1 oz of macadamia, hazelnuts, Brazil and 2 oz of pecans.
The reason I chose walnuts over other nuts is because it’s healthy, full of omega fat and available easily. And it’s way cheaper than hazelnuts. I know, I know! Yes, I am a super thrifty mom. You can always use any single variety of nut for this recipe. The best types of nuts that work for this recipe are hazelnut, macademia nuts, cashew nuts and walnuts.
Almonds are full of antioxidants and cashew nuts offer that nutty creaminess and other nuts for some flavors and loads of healthy fats. Then comes the heart and soul of the recipe, which is chocolate. I highly recommend using organic cacao powder for this recipe. I love the Navita’s Brand.
You can skip adding melted chocolate to this nutella and it will still be as chcolatey and decadent as the original nutella. However, I chose to add some. I had some vegan chocolate morsels, which I melted in microwave and added to the recipe. I used melted semi-sweetened Enjoy Life Semi-Sweet Chocolate . It’s however an optional step.
Use whey protein powder if you are not vegan or simply choose any chocolate based vegan protein powder for this recipe. Adding protein powder, however, is optional. I add protein powder to this nutella so that we can add a spoon on this yum nutty goodness to our smoothies and enjoy it post workout. You can also add unflavored protein powder of vanilla protein powder too. The one pictured here is vanilla protein powder. However, I used chocolate protein powder this time and much happier with the results.
We need some more healthy fat in this recipe, which is fulfilled by the organic extra virgin coconut oil. I added ¼ cup of coconut oil to this recipe. I suggest adding at least 2 tablespoon of coconut oil to this recipe to give it that smooth and creamy texture. Because we have a number of nuts, the mixture will be creamy and nutty after processing. Coconut oil gives it a very good spreadable texture, which I totally love.
Lastly, add sweetener. I strongly recommend using low-calorie sugar-free granular sweetener such as stevia for this recipe. Avoid using maple syrup or agave for this nutty spread. Because the base of the spread is nuts and fat, adding water-based sweeteners may not be a good option for this. I used 4 sachets of stevia for this recipe.

Vegan mixed nuts sugar-free nutella recipe:
Prep nuts:
- Preheat the oven to 200 F.
- Take 2 cups of walnuts, 1 cup of almonds and cashew nuts, and 1 oz of macadamia, pecans, hazelnuts and Brazil nuts.
- Layer all the nuts except hazelnuts on a baking sheet.
- Bake for five minutes until they feel warm.
Step-2:
Prep Hazelnuts:
- In a pan, take hazelnuts and roast for few minutes.
- Allow them to cool.
- Rub them between your palms or in a paper towel to remove their skin.
Step-3:
Process:
- Take all the nuts in a food processor.
- Process at high-speed for 10 minutes until the mixture is fine like a meal.
- Scrape around the edges and process again.
- Now add coconut oil.
- Process again, till the mixture is smooth and creamy.
Step-3:
Add Chocolate and Protein:
- Now add melted chocolate, organic cacao powder and chocolate protein powder.
- Process again until the mixture is super smooth and creamy.
- The mixture may feel warm at this point.
Step-4:
Sweeten:
- If required, add sweeteners at this point.
- Because I used mildly sweet protein powder and semi-sweet chocolate morsels, the nutella was already sweet.
- Still, I added 4 sachets of granular stevia to this mixture and processed again.
- Your homemade mixed nuts sugar-free nutella is ready.

Ingredients
