Sweet Valentine - Delicious & Dolce Dessert Challenge
This year, some of my blogger buddies and I have collabrated for this Valentine's Day challenge to cook something unique and fun. While I came up with this healthy vegan keto sesame cookies, my frineds have something really interesting to share. Here are their recipes. My Indian vegan sesame cookies are delicious, crispy and nutty with a hint of jaggery. Make them keto or indulge in this traditional version, and you will be addicted.
Every year, we Indians celebrate Makar Shankranti/ Pongal during winter. This unique Indian festival is characterized by sesame and nutty desserts sweetened with jaggery. My vegan keto sesame cookies are inspired from the til k laddoo often made during this unique Indian festival.
My Indian sesame cookies will remind you of the Uber-popular sesame laddoos or til-ke-laddoos. It has a strong sesame taste beautifully balanced by almond flour and cardamom, and sweetened with jaggery and brown sugar or keto sweetner.
If you ask me about the flavor profile, these cookies resemble the digestive cookies in texture and flavor profile, but with a strong hint of sesame nutty goodness and festive flavors.
Vegan Keto Sesame Cookies Recipe:
Step-1: Prep the Ingredients and Make the Sugar-Butter Mixture:
Ingredient list - ¾ cup whole wheat flour, ½ cup almond flour, ½ cup sesame flour
½ cup jaggery, ⅓ cup brown sugar, 1 tablespoon cardamom powder, ½ cup vegan butter or dairy butter softened at room temperature, ½ tablespoon baking soda, 4 tablespoon white and black sesame seeds, 4 tablespoon warm almond milk/dairy milk
Keto version: 4 tablespoon swerve as the sugar substitute and ¾ cup coconut flour instead of whole wheat flour
- Take vegan butter/grassfed butter at room temperature and add sweetener to it. Mix well till butter and sweetener incorporate well.
- If not making keto, add jaggery and brown sugar and mix with a spoon or spatula till the butter and sugar mix well. Don't overbeat the butter.
- Overbeating adds more air and cookies spread on the sheet while baking.
Step-2: Prepare the Cookie Dough
- Because jaggery and brown sugar are grainy, the sugar-butter mixture will look like this. Refer to the above picture.
- Shift all the dry ingredients (flours) with the help of a sieve and transfer the flour mixture into a large bowl.
- Add sesame seeds at this point.
- Add flour mixture to the butter mixture and mix gently till it takes the form of a dough.
- Add warm milk (preferably almond milk) as needed to knead and make the dough softer.
- Now roll the dough into a shape of a cylinder.
- Wrap tightly in a plastic cling wrap and refrigerate the dough for at least two hours.
Step-3: Cut the cookies and Bake
- Preheat the oven to 350F.
- Cut the cookies into thin disks using a sharp knife.
- Line the cookie sheet with parchment paper.
- Place raw cookies on the lined cookie sheet by leaving enough spaces between them. NOTE: These cookies expand as they cook in oven.
- Bake them till edges are brown. (12-15 minutes and no more than 18 minutes)
- Allow the cookies to cool down completely, preferrably on a wire rack, and store them in an airtight jar.
- Serve the cookies with some milk, keto hot chocolate in my case, or any beverage of your choice.
- These cookies store well in an air-tight container for a month.
NOTE:
- you can add half butter and half coconut oil.
- Replace whole wheat flour with coconut/almond/sesame flour for Keto version.
- Sprinkle cookies with black sesame seeds before baking.
- Add two tablespoon of tahini for a robust sesame flavor.

Hi Sophie, this sounds great! If I don’t find sesame flour, can I use just almond flour? And if I add tahini for the sesame taste, should I reduce the butter?

Yes you can totally do that. In fact you can take out butter completely if you want and add coconut oil plus tahini. Almond flour works great for this recipe, but remember to add at least little coconut flour as almond flour spread while baking.
